Apart from the taste, the advantage of all cooking oils used in Indian cooking is that they have high smoke points (above 232C / 450F). This means the meat and other ingredients will ‘seal’ very quickly when cooked.

For deep frying the the smoking point of edible olive oil is 160 – 180 degrees. This is quite unsuitable for Indian cooking styles. Where as for saute on high heat the ideal temperature is 120 degrees
